Odia Vegan Thali (ଓଡ଼ିଆ ଭେଗାନ୍ ଥାଳି) is a plant-based adaptation of the traditional Odisha meal pattern. It usually centres on steamed rice or pakhala, supported by dal, seasonal vegetables, leafy greens, chutney, pickle and rotating sides. Unlike a regular Odia vegetarian thali, the vegan version excludes ghee, butter, milk, curd, yogurt, paneer, chhena, honey, egg, fish, seafood, meat and animal stock.
A balanced Odia vegan thali may include dalma without ghee, santula, saga bhaja, vegetable besara, badi chura, ghuguni, aloo bharta, pakhala without curd, steamed rice, chutney and achar. In summer, suppliers can feature pakhala-style meals made without dahi; in winter, dalma, leafy greens and mixed vegetable preparations become stronger menu anchors. Odia food is often less oily and less aggressively spiced than many other Indian regional cuisines, so it works well for daily tiffin supply.
