A Karnataka vegan thali is a plant-based interpretation of regional Karnataka meals, built around rice, millets, lentils, vegetables, coconut, tamarind, curry leaves, mustard seeds, rasam-style broths, vegetable curries and chutneys. In Kannada, Karnataka food is often described through dish names such as ಬಿಸಿ ಬೇಳೆ ಬಾತ್ (Bisi Bele Bath), ರಾಗಿ ಮುದ್ದೆ (Ragi Mudde), ಅಕ್ಕಿ ರೊಟ್ಟಿ (Akki Rotti), ನೀರ್ ದೋಸೆ (Neer Dosa), ಚಿತ್ರಾನ್ನ (Chitranna) and ಪಲ್ಯ (Palya). The vegan version keeps the regional identity but removes dairy and animal ingredients.
