A Bihari vegetarian thali is a complete shakahari meal inspired by the home cooking traditions of Bihar. It can be described in Hindi as बिहारी शाकाहारी थाली. The thali usually combines a grain base, dal, vegetable curry, chokha, pickle, chutney, dairy or ghee accompaniments, and sometimes a sweet or festival item. Unlike vegan thali, vegetarian Bihari food may include ghee, curd, dahi, milk, paneer, chhena, makhana kheer or milk-based sweets depending on the home chef. The most recognisable dish is litti chokha. Litti is a baked wheat-flour ball filled with sattu, or roasted gram flour, and spices. It is commonly served with ghee and eaten with baingan chokha, aloo chokha or mashed potato. Chokha gives the meal its smoky village-style identity: roasted brinjal, potato or tomato is mashed with mustard oil, chilli, onion, coriander and lemon. A balanced Bihari vegetarian thali can include rice or roti, dal, litti, sattu filling, kadhi badi, dal pittha, khichdi, seasonal sabzi, aloo chokha, baingan chokha, tamatar chokha, dahi chura, dahi vada, achar, chutney, papad and a sweet such as thekua, khaja, peda, malpua or makhana kheer. Seller menus may rotate by season, festival and home style. This page must remain separate from Bihari vegan and Bihari non-vegetarian pages. Vegan pages should exclude dairy and ghee. Non-vegetarian pages may include Champaran meat, chicken, egg or fish. The vegetarian canonical URL should rank for users who want traditional Bihari thali with dairy/ghee allowed but no meat, no fish, no egg, no chicken, no mutton and no animal stock.
