A Bihari vegan thali is a complete plant-based meal inspired by the everyday home cooking traditions of Bihar. In Hindi, it can be described as बिहारी वीगन थाली or पौधे-आधारित बिहारी थाली. The meal uses grains, lentils, roasted gram flour, seasonal vegetables, pickles, chutneys, mustard oil and spices, while excluding all animal-derived ingredients. That means no ghee, butter, curd, paneer, milk, cream, chhena sweets, egg, meat, fish, seafood, honey, bone stock or meat stock. The most recognisable base is litti chokha. Litti is a baked wheat-flour ball filled with spiced sattu, or roasted gram flour. Traditional listings often mention serving it with ghee, but the vegan version must use mustard oil or another plant oil instead. Chokha is usually a smoky mash of roasted brinjal, potato or tomato with mustard oil, onion, garlic, green chilli, coriander and lemon. These elements make the meal earthy, filling and suitable for recurring tiffin plans. A balanced Bihari vegan thali can include steamed rice, roti, vegan litti, arhar dal or chana dal, aloo chokha, baingan chokha, tamatar chokha, seasonal sabzi, chana ghugni, dal pittha, khichdi, sattu paratha without ghee, raw onion, green chilli, achar and chutney. Some suppliers may offer festival-sensitive vegan Thekua made without ghee or dairy, but each seller must list ingredients clearly.
